I’m currently eating a high carb low fat vegan diet. Unlimited carbohydrates! I avoid gluten and soy as much as possible because they both flare up my Hashimoto’s Thyroiditis. Most days I eat as much fruit as I want during the day and a cooked vegan meal for dinner.
A typical day looks like this:
Breakfast: Smoothie with 5-6 bananas (a few frozen, a few fresh), 1 cup coconut water, 1 cup of spinach (I don’t always do greens in my smoothies, sometimes I just don’t feel like it!), 1 squirt of SweetLeaf Vanilla, 1 cup of water.
Snack: Piece of fruit such as an apple
Lunch: Same as above or other fruit combos such as banana-mango or mango-pineapple-orange-parsley
Snack: Piece of fruit
Dinner: a plateful or two of oven baked fries (free of oil and salt), seasoned with fresh lemon, black pepper, and a side of hummus and romaine hearts. I spread hummus on the insides of the hummus hearts and stuff them with fries. Hummus potato wraps!
